  • 4 oz. cheddar cheese
  • 1 cup green chilies and tomatoes
  • 3 tbsp. (about 45g) Parmesan cheese
  • 1/4 cup sour cream
  • 16 oz. package frozen cauliflower
  • 1 medium jalapeño pepper
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Using kitchen shears, cut the chicken thighs into bite-sized pieces. Season with salt, pepper, and chili seasoning.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned on all sides.
  3. Lower the heat and stir in the cream cheese, sour cream, and 3/4 of the cheddar cheese. Mix until fully melted and combined. Add in the green chilies and tomatoes, stir well.
  4. Transfer the chicken mixture into a casserole dish, spreading it out evenly.
  5. Microwave the frozen cauliflower until soft. Blend it using an immersion blender with the Parmesan cheese and remaining cheddar until it reaches a mashed potato-like consistency. Season with salt and pepper.
